"I think patience is probably the biggest factor of it. The reason I kept that patience was because I felt so much happier. I had to keep being consistent and keep focusing."

Katie "Kookaburra" Butler is an avid cyclist and a vegan YouTube Content Creator. She posts weekly videos on cycling, nutrition, and living a vegan lifestyle. She has about 20,000 subscribers on her channel and is one of the few women cyclists on YouTube.

However, before Katie adopted a healthy vegan lifestyle, she suffered from an eating disorder called Bulimia. She stated that she felt "mentally unwell" as she was intentionally binging and vomiting after eating. Once she found out about the benefits of a plant based diet and cycling, she was able to get out of "the darkest time" of her life. Not only was she able to address her eating disorder through nutrition and exercise but she was also able to lost 35 kg (77 lbs) and ride as far as 400 km (249 mi) to 600 km (373 mi)! That's the power of plant based nutrition, folks!
